Unfortunately the replays are not very representative of gameplay; they're a select minority that occur at a very specific time zone due to being recorded almost exclusively by Americans. This can be further illustrated by looking at the number of games recorded by with certain players in it - it's very heavily biased toward a certain demographic and is not well rounded in the slightest. You will miss many aspects of gameplay in the videos simply because the recordings are not numerous or diverse enough.
Many games tend to end in Cubes; although not Tavaras. Tavaras are simply unfavored as most players tend to like to spam tier1-2 warbirds or small vessels. In many cases it is not the ease of getting to something, it's imagination and the forethought purpose that will dictate the use of a unit.
Since a Phalanx does a hard amount of area damage to nearby ships - regardless of their size - it is much more uniquely purposed to dealing with mobs of any type. This is something a Defiant can never do, with or without its special. At the end of the day, many vessels in Fleet Operations may share overlapping roles, yet still prove quite unique when in the right hands. If you can't use a certain unit well, there is always another which may suit your strategy better
. As you said, you prefer to use ranked Akiras - many players forgo Akiras altogether.

give the phalanx another try.

As long as they give some more punch to the Teutoburg as well. 
I tend to favor the Defiants myself. They are faster, don't seem to get hit as much, have an awesome weapon disabling special and once they get the quantum torpedoes they are powerhouses. I think they do a much better job than the Phalanxes and are cheaper to make.
To put an even finer point on it, I HATE microing ships......just hate it. However, I actually do turn off the auto special on Defiants and it is the only ship that I feel has a worthy enough special to use. I can completey shut down a group of large ships just by cycling through my various Defiants special.
I should specify that when I mean replace the Phalanx with the Teutoburg I am talking about the model. Obviously you would have to change out the weapon odfs. It just looks like a mean, durable ship. Maybe increase its size by 50% as well.
