Of course, Enterprise showed that you can undo assimilation with radiation! Hopefully, that's listed as only for Denobulians. That bit annoyed me.

well they didnt really undo assimilation, only kill nanoprobes and the limited technology that those nanoprobes could construct without an assimilation chamber working to assimilate.
imo the previous evidence that nanoprobes could create anything that large was kinda silly, where do they get the metal for all this tech?

The radiation only disabled the nanites (I refuse to say nanoprobe!), they could probably be reactivated if any more were injected.
Maybe they joined and formed a replicator to make other types of nanite for components? I'm sure someone could technobabble an answer.
Don't worry, it is Denobulan-exclusive. Phlox said only his kind are immune to the radiation used, anyone else would be killed.

lol they indeed do more than probe

HEY! that rips off stargate! >:( still seems too much for things the size of red blood cells to accomplish

Human iron metabolism - Wikipedia, the free encyclopedia
i suggest finding a more credible source if you want to go into details
also note i think a human body has about 2 gallons of red blood cells (?) i think i can't remember...

its possible nano probes can convert energy into mass but only on a cellular level with several million nano probes in the body making more of them selves and generating mass this could explain how tubes and implants just seem to grow on a person and a console.

Remember when they had Hugh? Raw energy was converted into nutrients by his implants as a more efficient means of feeding his biological components. I think that's a pretty good sign of micro-replicators.

yes because the borg totally use metal that is so useless it rusts....
think about it, trek metals are duranium, duratanium and other stupid things that are probably alloys. simple iron doesnt cut it. and if they turn all the red blood cells into metal that body wont have any red blood cells and will die.
also other species may not use iron in their bodies.

Using the red blood cells wouldn't always kill potential drones. If modern Humans know how much blood a person can lose without death, the Borg should know just as well.
Quantity is what I'd focus on; I'm not sure if the body can lose enough to make all the Borg tech without problems, and drones don't show signs any of blood loss I'm familier with.

Pallor. They definitely show that one.

True, but that's from assimilation rather than blood loss though. Locutus went from 'healthy' to 'Zombie' in seconds just from having a glowing stick stuck in his ear.

....but my answer works and does not involve iron or red blood cells
