I've read dozens of Star Trek Novels, many of them are enjoyable some are absolute crap. Call me crazy but i actually enjoyed the Shatner books. Primarily because they're written by Judith and Garfield Reeves-Stevens, whose books i usually enjoy. The plot can be pretty Mary Sue, but i mean they match the same level of Kirk centricness as the TOS movies. The first 3 were pretty good, the second trilogy was excellent and the last 3 were meh. Besides those though I'd recommend:
Articles of the Federation (Think Star Trek + West Wing)
The Lost Years series
Genesis Wave set
The Dominion War series.
The aforementioned SCE books are great too, the New Frontier series is also pretty good.

One of the TNG novels, Ship of the Line, has always been one that I've enjoyed. It think it was by Diane Carey.
There's also the post-Insurrection/pre-Nemesis 'A Time To...' series. It's been a few years since I've read them, but I remember enjoying them.

Yeah about "Before Dishonor". Can anyone explain to me why the book was even called that to begin with? Like seriously I do not even recall any talk about Honor in that book to begin with.
There were atleast two highlights from that book that were funny atleast. One of them involved the Doomsday machine from TOS and the other involved Janeway.
If anyone is going to read any of the books that set up the Destiny Trilogy I would specifically recommend "Resistance" and "Greater Than The Sum". Resistance started pretty well but it went downhill near the end and "Greater Then The Sum" is generally okay. All you really need to remember from "Before Dishonor" is that it resolves what happens in Resistance and sets up "Greater Than The Sum". In the grand scheme of things it does not do much else.

I found the first two Titan books pretty good, however after that I struggle getting through them, even the Titan book for Typoon Pact. I guess I just find the other books I have read more interesting compared to Titan.
I heard the A Time to series is pretty good, it's set between Insurrection and Nemesis.

I've heard the Saratoga (DS9) book is pretty good. Takes place with captain sisko's reunion of the saratoga-A galaxy-class maiden voyage.

My dad has loads of Star Trek books, but I've only read two, and I've listened to the audiobooks on my iPod of about 5 more. The two I'd recommend are TNG: Balance of Power, and Q-Squared. Balance of Power was my first read, and one of my favourites because a part of the story is set in Starfleet Academy, something which I believe was never fully visited in any of the Star Trek series to it's full potential.
Q-Squared was great, I went on a 3 week road trip around the States (I'm from the UK) for my 21st with two friends, we spent a lot of time driving (4,000 miles in 3 weeks, LOTS of driving
) and I read this book whenever we were in the middle of forests with nothing to see. This book visits multiple dimensions, it's based around Q trying to teach his 'God Son' how to be more Q-like. There's also a funny part in it about Q knowing God, and giving him pointers on how to create the universe, I liked that part
