there were 2 defiants the first defiant and the Sau Paulo something or other and then it was renamed the Defiant

Recap: Martok becomes Chancellor of the Klingon Empire, Worf accepts to be Martok's political assistant. They return to Q'onos together and remain there until Worf later takes command of the Defiant (destroyed in the battle of Wolf 359 in First Contact). After him being rescued from the blazing Defiant in Wolf 359, worf resumes charge as tactical officer under the name Enterprise once again.

Well actually the Defiant wasn't destroyed at all..

Actually, Worf was made "Federation Ambasador to Qronos"  to which Martok quiped, "Finally, an ambasador i can go Targ hunting with, this might not be so bad after all"

as for the Defiants,  well,  there was only one TRUE Defiant, that was the NX-74205,  it was destroyed in a battle with the dominion and there new Breen allys with there neat little energy dampening weapon that worked on every ship except one klingon brid of prey.

Starfleet came up with another Defiant class ship for Sisko and crew but was named USS São Paulo (NCC-75633)  but they were allowed to rename it Defiant.

IF ANYTHING,  it should have been Defiant NCC-74205,  but it still said NX in all the remaining space battles, (nice slip FX/continunity departments
