they did, nothing visible on the outside of the ship, maybe they were worried the borg could track their large scale tech, but they kept some technobabbly stuff inside. maybe they could keep a small boost in system value for the trouble.

nearly all couplings in existence now are mechanical (ref). but even if we assume that power couplings exist today (maybe for wireless power or something), and even assume they are abundant, like internal combustion engines, they are still not star trek power couplings, have you ever seen any of our tech work with electro plasma? a car engine is called an engine today, a warp engine is called an engine in star trek, they are almost nothing alike.
power couplings may share a name with something that exists today, but they definitely don't operate in the same way.
and we've never been shown how a power coupling actually operates in the show. so it's technobabble along with a lot of the stuff in voyager. it's something that makes the ship go, how exactly it enables going we don't know, and isn't really important. power couplings could be big and rare if needed by the story (like warp coils in the nacelles), or could be small and abundant if needed by the story, they didn't need to pin the device's characteristics down.
the point of the technobabble is easily summed up as "borg messed with something that makes us go, now we go faster, lets leave it". power couplings could be replaced with neutron inverter or flux capacitor, it won't matter, the line still works.
