why wasn't scotty in yellow? and shouldn't Uhura be in blue, or maybe yellow too?

Because engineering was red. It became yellow the same time security did.

As for Uhura, she would be yellow also.

do you know what job each colour represents? red was used for captains and commanders in the TNG etc
