Wouldn't the Cube with 2 armor upgrades be called a Tactical Cube?

I'd say so. Certainly looks like a Tactical Cube.

Additionally, I tried to recreate the double episode "Unimatrix Zero" by sending an Intrepid class against it. The results were not pretty.

These ships are not the Voyager Borg, they are true Borg. The FO ones are more like the 'Greatest force of evil' in TNG than the 'Greatest force of redshirts' that Voyager fought.

Besides, when Voyager fought a T.Cube, didn't they have a Borg Sphere to help them?

They did have the assistance of a mighty 'Sphere' in the final battle, so this would have helped somewhat.

I don't know y'know. I think runaway has a point. Remember what Seven of Nine said to the 29th century drone designated 'One', she said that "Captain Janeway is a resourceful captain". I have to agree. Our Cathy is a feisty lady, in fact I'm quite taken with her.

Voyager is no ordinary ship hey. Here's to Cathy!!!

plus the voyager had the ablative armor and transphasic torps (or how they were called) in endgame.

Yep in endgame they had those things. Now if Voyager had been protected by the armour in Unimatrix Zero, then that would have made a bit more sense. Fifteen minute battle with the most powerful cube, here we come!
