The Assimilation would take over the body, so if the symbiote isn't assimilated, it would be trapped in a body it has no control of (poetic justice, anyone?)

I always wounder what would happen with the likes of rodent's i would love to see a drone trying to catch a rat to asimilate it, "Runnig is futile you will be assimilated mouse!" *Pictures a borg runnig try to pick it up*

I seriously doubt that a rodent has the technilogical or biological  advances to   help acheave  Perfection. Such a imperfect  organisum would either  be  left alone , or if they  posed a threat to  the collective . Simply erradacated.
